I woke up one Sunday morning in the mood for pancakes! We often make pancakes or waffles on the weekend, yet this weekend I wanted to try out a new recipe. While I do believe my kids eat pretty well being the kids of an RDN, they are also regular kids who would gladly eat crackers for dinner versus vegetables. They do eat their vegetables, yet knowing how important they are for our health and digestive health, I\u2019ve been wanting to come up with more tasty veggie packed recipes. I give you&#8230; Carrot Apple Maple Pancakes! My kids gobbled these up and my daughter said they were \u201cGrrrrific!\u201d which if you watch Daniel Tiger, that\u2019s pretty much the best complement a young child can give.<\/p>\n<div style=\"margin-bottom: 5px;\">Wait until you see multiple little bubbles coming through the pancake and the edges start to look cooked, this should take anywhere for 2-3 minutes.
