Then add the cilantro, minced garlic and spices and saute for 2 more minutes.<\/div><\/li><li id=\"wprm-recipe-106101-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Scoop onion mix into a high speed blender with the remaining sauce ingredients and blend for 2 minutes.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Cashew Cream Sauce<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-106101-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Add all ingredients into a high speed blender and blend on high for at least 2 minutes, until silky smooth.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Enchilada Filling<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-106101-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Warm the olive oil over medium heat, add the onion, bell pepper and sweet potato; saute for 5 minutes.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Turn off the heat and add one quarter cup of mole sauce, salt and pepper, cilantro and the spinach. Stir together, then push to one side of the pan.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Add the white beans and mash, I like to mash them about 80 percent of the way to a paste, leaving a few whole beans for texture.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Then stir everything together.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Lay out the tortillas, add the filling and roll.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Add about a half cup of sauce to the bottom of a baking dish and spread out. Lay the enchiladas in the dish, make sure the side where the tortilla folds over itself is down and that they are packed tight, so they do not unroll during cooking.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Pour more enchilada sauce over the top, and drizzle with cashew cream.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Heads up, you will have enough mole sauce and cashew cream to make this dish a few times, so don\u2019t think you need to add it all to one dish.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Bake, uncovered, in a 350 degree oven for 30 minutes.<\/div><\/li><li id=\"wprm-recipe-106101-step-2-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Remove from the oven and eat as is or top with anything you love, such as avocado and cilantro!
